This is a wonderful question and one that commonly comes from men. Ejaculation/orgasm is fast in all mammals. Even humans experience very fast ejaculations. We are always trying to control them and slow them down.
You have already started that process by stopping the stimulation for as long as you need and then starting up again. It is important to begin to recognize when you have reached the point of "no return" which is that point that if you pass it, you will ejaculate whether you want to or not.
The more you recognize it, the more you are able to stop and slow it down, keeping control for longer. This will be important when you have a partner as well.
What you can begin to do is find other ways to lower the stimulation, so that it isn't just stopping completely from stimulating yourself. You may find that you can think of something else, or create a different fantasy that allows you to slow down. Using a latex condom can also help you because it cuts down on the stimulation the penis feels.
Remember, this is a common problem that most all men face. Learning how to do this while you are masturbating can be very helpful both for your own pleasure, but also when you have a partner some day.
